Do you know which food is made around the world but looks very different, depending on where you are? It’s bread! From flat breads baked over an open fire, to dark, hearty whole grains, to light, fluffy, white loaves for sandwiches, bread can look like almost anything.

Some cultures have specific rules for when to eat bread and how to get it. For example, people in some countries traditionally eat bread for dinner. In other places, people get up before the sun to buy bread at the local bakery. Whether you buy it off the store shelf or hot out of the oven, it’s important to know what goes into the food you eat and if it has high nutritional value.

One way to be sure of the ingredients is to bake bread at home! The ingredients for a simple loaf are easy: flour, water, salt, yeast, and sugar. Yeast takes time to rise, so you do have to plan ahead. But the smell of fresh-baked bread is definitely worth the time and energy it takes.

Lily:  Hey, Raf! Do you want to try this bread I made? It’s really good. It’s a sourdough. I spent like five hours making it today.

Rafael:  Oh, that’s what smells so good. How did you make that?

Lily:  It’s pretty basic. It’s just flour and water and yeast, and you let it rise for a long time. Then you have to knead the dough, and then you bake it. And that’s all there is to it.

Rafael:  So you never buy bread at the grocery store anymore?

Lily:  Not if I can help it. There are too many preservatives. I like knowing what is in my food.

Rafael:  This one’s sourdough. Are there other kinds that you make?

Lily:  I like making challah bread, breads with whole grains in them, that kind of thing. Do you want to try some of my bread?

Rafael:  Well, I have a confession to make. I’m actually gluten-allergic.

Lily:  What? What’s gluten? I don’t know what gluten is.

Rafael:  Gluten is something that’s found in bread.

Lily:  Oh, really?

Rafael:  Yeah, but you can make bread gluten-free. Did you know that?

Lily:  I did not know that. I guess I’ll have to find some recipes.

Rafael:  They say it’s actually better for you to eat things without gluten. More nutritional value.

Lily:  That remains to be seen.

Lily loves baking bread. It’s pretty easy, and she always knows exactly what she puts into her food. Baking bread herself assures Lily there are no scary preservatives or anything that’s not natural. Plus, she can bake all different kinds of bread.

Rafael thinks Lily’s bread smells amazing, but he can’t eat it, even though she offers him some. Rafael says he’s allergic to gluten, which means he’ll get sick if he eats most bread. The protein gluten is found in wheat flour, so he has to be careful about his food choices.

Not all hope is lost, though! Rafael tells Lily there are some breads that are gluten free. She promises to look for some recipes and try baking a gluten free bread soon.

My grandmother used to bake bread, my mother also helped her. But we don’t do that anymore, it’s a long and exhausting process.


Now we get bread in the morning from a local bakery. We have so many kinds of bread, I think the main difference between all kinds is in the size and the amount of flour in it.

I love bread. Unfortunately I don’t bake my own bread. The efforts takes to much time in my opinion. By us, Bread is available in huge shapes, sizes and formats. We have dark, bright and small breads. About gluten-free bread, I’m not sure, if is really necessary. Partly it seems that “i’m gluten allergic” is just a phrase.

Bread is one of the oldest staple food since antiquity. It is also sometimes called poor man’s food; as one can survive on bread alone even if nothing else is there. Bread making process is quite diverse and varies from culture to culture. In many cosmopolitan cities one can find wide varieties of breads in grocery stores; as people from different cultures bring different recipes for wider consumers. Making fresh bread at home is better as one can avoid additives. Bread making machines are affordably making the job easy peasy lemon squeezy. However, this new marketing strategy of sub categorising breads into gluten and gluten free is inconceivable. People since thousands and thousands of years never complained about it in the whole recorded history than how it become problem since last few decades. This problem could be due to genetical modification in the crops as there is big controversy over it. Before buying flour for bread check the labels that say: non gmo flour.

just a few advices to get good results in making pizza or bread


1. when you make the dough…..... use fresh yeast, not the dryed one. the taste with dry yeast is not soo good


2. make a pre mix  zake fresh yeast, put 1 cup of warm water and some sugar, (yes, sugar, because sugar  support the yeast activitiy) and  50 grs of wheat flour.


let this mix work for 30 mins


after that add the rest of flour and water, kneed it good, put that on a warm place for another 30 mins. The quantity of dough should be doulbled


than roll out (for pizza) or kneed for bread


now the bread needs another time 20 mins for proofing and for pizza, maybe 10 mins


than you can bake it. If you want to have a cross skin for bread, add some water on the dough, before you put it into the oven


a good result for pizza: put the metal on the bottom


for bread, put the metal in the middle and spray some water


than, let the oven do the work. I m sure, the result will be good and you enjoy


bon apetite.


By the way…...... I love Iranian bread soo much, hope soon, I can have it again in Tehran and Isfahan

a2020,  Hi  ...  celiac disease  or glutten intolerance puts our health in jeopardy if we are not aware  of it. Also it is necessary that a mother  have their children tested  for the first years they are born. Now we have a lot of information  about this disease , i don´t think that in the past  most people knew that  they were suffering  from glutten- intolerance ,it is so serious that even a grain of wheat  that accidentally is eaten  might sent the person to the hospital.

My mom tried to bake bread at home a few times … well … it smelled really good this fresh baked bread … but the taste especially the next day … sorry it wasn’t (it was like clay). You know … I had to tell her some sweet lies about this bread :). Maybe you need for that the real oven like in the old houses in the country side … not the electric ones that are available in the cities. Or maybe it was the lack of experience?

I love bread. We eat differente kind of bread in my country at any hour of the day. So many years ago, my mother used to bake our own bread for breakfast… bay it was strenuous doing that every night. So we just buy it at the bakery. Nevertheless, nothing compares the taste of what we prepare with our hands.

I prefer homemade bread ,free from preservatives  and fresh out of the oven . Today  we have bread makers  on the market ,  i give faith that  the loaf we get is   of excellent quality ,we may want to add   flavours  as of  fruits , nuts , our choice.  I like the garlic bread  ,it has to be first heated in the microwave , a pleasure  to indulge in :))))

I’ve never baked bread by my own. In fact, whenever I’m at home one of my major duties is to purchase different sorts of fresh bread for breakfast especially in the morning. 


In my home town there are a wide variety of bread which is served in bakeries. Some of them are totally large and thin. Others are completely different in shape and initial consumed material. A few types of them are producing in traditional way and the rest are modern. Furthermore, as a form viewpoint most of them look like circular, cylindrical, tiny piece of squire shaped and so on.



I think bcz the gluten makes it healthier and full of nutrition value, certainly, it would be so good. Sincerely, I wish to be delicious too.
